Sweet Filipino Sausage

had taken some longaniza out of the freezer and even though it was late when I left the office, I wanted to eat it. So I passed by the grocery store on the way home from work. I bought jasmine rice and an organic zucchini for dinner and some mango for breakfast.

I sautéed the zucchini with sliced onions and a bit of olive oil. Then finished the pan with soy sauce and black pepper.

Boiled then quickly pan fried the sausages. Cut them in half and browned the inside.

I made the rice and quickly cooked it up in the drippings from the sausage. And chopped a bit of raw onion to cut the sweetness from the sausage. 

Yummy.
