Four Cheeses and Spirals

Cathy was asking about crock pot mac n cheese recipes. I had already decided to make homemade mac n cheese for dinner with the half box of rotini that I had in the pantry. Reading through all of ten recipes got me extra excited to make it.

I did mine on the stove stop:
2 Tbsp butter. 1 1/2 Tbsp flour. Cooked it together until light brown. Added a cup of milk slowly while whisking. Added about a cup of Mexican blend shredded cheese. And 3 Oz of goat cheese, whisking to incorporate over low heat. Then mixed it by the ladleful into half a pound of cooked pasta.

So delicious and it only took about 10 minutes!
