Experimental Enchiladas

I decided to make enchiladas from the shredded chicken that was a result of making broth from a whole chicken last weekend.

I spent part of the day reading recipes trying to figure our what goes into enchilada sauce.

I created a recipe using the rest of the onion from the earlier soup, a diced jalapeƱo, another cup of chickens to I. A can of tomato paste, chili powder, garlic salt and black pepper. It turned our fairly well. Jonathan came for dinner so we built out the casserole dish together. 

We had 2 tortillas left and some chicken that was over flow, so we made tacos with chicken and cheese to eat while we waited on the main event.

I finished off my meal with a few more bits of pumpkin ice cream.
