Salmon Curry Dinner Party

Lauren always asks for Thai coconut curry when I am around to cook for her. We got salmon to go with the veggies that they had in the fridge. Butternut squash, peppers, zucchini, carrots, and a bit of shredded coconut on too. Plus Trader Joe's brown rice medley.

Cathy made a salad with fresh pomegranate seeds and hearts of palm, two of my faves.

For dessert we made brownies, with dark chocolate gelato and fresh berries.
